Savory Soy Milk

Ingredients
Soy milk 1-1/2 cup
You-tiao (Chinese donut)1/4 stick
Tiny dried shrimp1/2 Tbs
Minced pickled Chinese mustard1 tsp
Minced scallion1/2 Tbs
Chopped cilantro1 tsp
Salt1/4 tsp
Dark vinegar1 tsp
Rice vinegar1 tsp
Sesame oil1/8 tsp
Chili oil1/8 tsp

Instructions
1.Boil the soy milk in a pot.
2.If using frozen You-tiao, fry it over 200°C/400°F in an air fryer. Or cover the You-tiao with a paper towel and microwave it for 10 seconds. Cut the You-tiao into small segments.
3.Rinse the dried shrimp and drain the water. Pan-fry the dried shrimps without oil over low heat until aromatic.
4.Place all the ingredients except for the soy milk in a bowl. Pour the boiling soy milk in the bowl. Wait for 2 minutes to let the soy milk curdle.

麻油1/8 小匙

做法
1.將豆漿在鍋裡煮滾。
2.如果使用冷凍油條,用氣炸鍋以200°C/400°F炸6分鐘。或放進微波爐蓋上紙巾微10秒。將油條切成小段。
3.蝦皮用水沖洗後濾掉水份,再放進乾鍋用小火炒香。
4.將所有材料(除了豆漿)放進碗裡,再把滾豆漿倒進碗裡。靜置2分鐘讓豆漿結塊。
